Kings County is among the very first craft distillers to release a style of whiskey that can be considered the highest class of American Whiskey. Bottled-in-Bond is a designation that refers to American whiskeys (and some brandies) that are distilled, aged, and bottled entirely at one distillery, from barrels filled in one season, by one distiller. Furthermore, the whiskey must be four years old and bottled at precisely 100 proof. In the old days, this was a way to protect the consumer from brands that were merely bottling up whiskey from other distilleries and blending or adulterating that whiskey. In an era when consumers still sometimes have a hard time knowing exactly where their whiskeys actually come from, bottled-in-bond best expresses the advantages we enjoy by making all our whiskey in-house from grain to bottle. Clocking in at 116-128 proof depending on the batch, Kings County Barrel-Strength Bourbon is pulled from older barrels than our flagship bourbon, aged any where from two to almost five+ years. Many enthusiasts prefer whiskey straight from the barrel, which allows the drinker to add ice or water to taste. Smooth and bold, this is our most flavorful and intense whiskey. Wine and Spirits magazine awarded it Best Bourbon of 2015.

Our latest release of barrel strength bourbon has a 3 year age statement, but contains barrels as old as 5.7 years. This is intense, flavorful, versatile bourbon at 63.7% abv (128 proof). Notes of blackberry, fig, raisin, tobacco, brown sugar, toasted oak, and dried cherry on the nose, with ripe vine fruit, wild cherry, dark caramel, gingerbread, and a hint of cream soda on the palate. Never chill filtered, this is a richly textured, velvety whiskey for being such a high proof.

We’ve given you whiskey finished in used cooperage. We’ve given you whiskey that isn’t finished at all. So for our 4th release, we wanted the barrel experts at Kelvin Cooperage to show off their skills with new cooperate and create something unique and innovative. They delivered. After crafting a series of medium toast casks, then a series of #2 char casks, and finally a third series of #4 char casks, William Hornaday and his team at Kelvin broke all the barrels apart and rebuilt them, alternating between toasted staves and #2 char staves on some barrels, and toasted and #4 char staves on others, they have created the first ever “Split Stave™” barrels. To fill them, we blended a 5.5 Year Old Kentucky Straight Bourbon and a 12 Year Old Kentucky Straight Bourbon and let them rest in our Split Stave barrels for five months. We produced 2,700 bottles from this inaugural release of Split Stave™ by Kelvin. It is uncut and unfiltered at 115.6 proof.

Old Sherry Pike is a blend of 6-and 12-year old Kentucky Straight Bourbon Whiskeys with mash bills of 78 % corn, 10 % rye, 12 % malted barley for the 6-year and 74% corn, 18% rye, and 8% malted barley for the 12-year. The sherry barrels were originally used in Span to age Oloroso Sherry, a fortified wine known for its sweet and nutty characteristics. 1,757 bottles were produced at its natural cask strength - 59.45 proof, of 118.9% ABV without chill-filtration.
